Passover Recipe Ideas For This Year's Seder (3)

The first Passover Seder is Monday night, and for Jews everywhere that means giving up chametz, also known as leaven, which is any food that is made of grain and water that is allowed to rise.

This can be a difficult thing to avoid when trying to prepare meals, but luckily for you, Patch has put together a list of delicious recipes that you can enjoy even if you don't find the afikomen.

Farfel Kugel

Ingredients:

  • 4 ½ cups farfel
  • 6 eggs separated
  • 1 cup sugar
  • ½ tsp salt
  • 2/3 cup orange juice
  • 6 apples
  • ½ cup margarine melted

Instructions:

Pour farfel in bowl, cover with cold water to soften and drain. Beat yolks, add sugar, salt, melted margarine. Pour into farfel and mix. Beat whites stiff, fold whites into farfel mixture. Peel and slice apples and add to farfel mixture. Grease 9x13 dish. Bake 350 degrees for 40 minutes. Cut into squares.

Sweet & Sour Meatballs

Use 3 QT Saucepan

Yields 24 Meatballs

Ingredients:

  • 1 pound ground beef
  • 1 egg, beaten
  • ½ cup matza meal
  • ½ onion, grated
  • ¾ tsp salt (or to taste)
  • 2/4 tsp pepper (or to taste)
  • ½ tsp oregano

Sauce Ingredients:

  • 1 cup jellied cranberry sauce
  • 3/4 cup ketchup
  • 3/4 cup brown sugar
  • 2 tsp lemon juice

Instructions:

In a large bowl, combine ground beef, egg, matza meal, onion and seasonings. Form into 1-inch balls.

Sauce: In a 3-quart saucepan, combine cranberry sauce, ketchup, brown sugar, and lemon juice. Cook over low flame 25 to 30 minutes. Stir often to keep smooth.

Add meatballs and simmer for 1 hour. Serve hot.

Apple Cake

Ingredients:

  • 6 eggs
  • 1 1/2 cup sugar
  • 1 cup oil
  • 1/2 tsp salt
  • 3/4 cup potato starch
  • 1 1/2 cup cake mea
  • 5 apples peeled and sliced
  • 1/2 cup sugar and 3 tsp cinnamon
  • 1/2 jar strawberry preserves

Instructions:

Beat eggs, sugar, salt, oil and then add dry ingredients. Pour 1/2 in a cake tin or 9x12 cake pan. Spread apples, preserve and sugar and cinnamon - then add the other half of the batter and top with apples, preserve, sugar and cinnamon.

Bake 1 hour 350 degrees (check with toothpick to make sure the cake is fully baked inside).

Sweet Potatoes with Orange

Ingredients:

  • 3 lbs sweet potatoes (9 small or 6 large - fresh or canned)
  • 1/4 lb margarine, melted
  • 1/2 cup orange juice
  • 1/2 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tlbsp grated orange rind
  • 1/4 tsp salt and pepper to taste
  • 1/3 cup brown sugar
  • Marshmallows

Instructions:

Preheat over 400 degrees. Boil sweet potatoes in their jackets for 20-30 minutes until tender (if using fresh). Peel and mash well. Add margarine, OJ, nutmeg, cinnamon, orange peel, salt, pepper and brown sugar. Whip until fluffy (add a little oj if mixture seems too dry). Place in a greased shallow baking dish (2 qt). Bake at 400 degrees until top is lightly browned. Add marshmallows last 5 minutes.

Raisen Farfel Kugel

Ingredients:

  • 2 cups farfel or matzah
  • 6 eggs, beaten
  • 1/2 cup raisens
  • 1/2 tsp salt
  • 1 cup white sugar
  • 2 tblsp ground cinnamon
  • 4 tblsp butter

Instructions:

Preheat oven to 350 degrees. Grease an 8x8 inch baking dish. Soak farfel or matzah in water 10 minutes and drain. Add beaten eggs into the bowl of farfel and let stand 10 minutes. Stir in raisins, salt, sugar, cinnamon and butter. Transfer mixture to prepared dish. Bake at 350 degrees for 50-60 minutes.

Flourless Double Layer Bars

Makes 32-40 bars depending on how you cut them

This recipe has three parts to it.

Part 1

Ingredients:

  • 1 pound bittersweet chocolate
  • 1/2 pound butter or margarine

Instructions:

Melt chocolate with butter or margarine in a double boiler. Set aside.

Part 2

Ingredients:

  • 8 egg whites
  • 8 tablespoons sugar
  • 7 ounces ground almonds

Instructions:

Beat egg whites until almost stiff. Add sugar and continue beating until stiff. Fold in ground almonds. Spray a lasagna siz pan with PAM. Bake above mixture for 20 minutes at 350 degrees.

Part 3

Ingredients:

  • 8 egg yolks
  • 8 tablespoons sugar

Instructions:

Beat egg yolks with sugar. Add cooked chocolate mixture (part 1) to the egg yolks and sugar and mix together. When the egg white mixture comes out of the oven, pour chocolate mixture over the baked egg white mixture and bake an additional 20 minutes at 350 degrees. Cool completely, cover and refrigerate until ready to serve. Cut into bars. (This also freezes well).

Chopped "Liver" Spread

This is a vegan recipe from the book No Cholesterol Passover Recipes by Debra Wasserman and Charles Stahler. You can also find this, and other vegan recipes, by using this website from PETA as a resource.

Ingredients:

  • 3 Tbsp. oil
  • 1/2 lb. mushrooms, chopped
  • 1 small onion, chopped
  • 1 cup chopped walnuts
  • Pepper and salt, to taste
  • 1 Tbsp. water

Instructions:

Sauté the mushrooms and onion for 8 minutes. Pour into blender or food processor, adding walnuts, seasonings and water. Blend until smooth. Serve on matzo as a spread.
