Royal Icing Supplies

  • KitchenAid Stand Mixer – a large mixing bowl and electric mixer works just as well however a KitchenAid stand mixer has been a staple in my kitchen for years.
  • Mixing bowls – glass mixing bowls are my favorite because I can see what is happening while mixing.
  • Measuring cups and spoons – I am forever losing and buying new ones!
  • Icing bottles – I much prefer to use icing bottles over piping bags whenever I am decorating my sugar cookies.
  • Icing tips – having a variety of icing tips ready to use is helpful! I routinely use piping tip #2 and #4.
  • Wire drying rack – this one is perfect for allowing the icing to dry quickly.
  • Cookie scribe or toothpick

Cookie Icing Tips

  • If the icing is too hard, add more water one drop at a time.
  • If the icing is too soft, add more powdered sugar one teaspoon at a time.
  • Use icing bottles rather than a piping bag, I have had many mishaps where the end of piping bags flops over or drags into decorated cookies. Squeeze bottles are also easier to store and fill in my experience.
  • Icing can be stored at room temperature in an airtight container for up to two weeks. To use, mix the royal icing with a hand mixer so that it becomes smooth and shiny again.
  • Flood consistency is reached when a spoonful dropped onto a flat surface takes 10-15 seconds to become completely smooth.
  • Getting the right consistency can be tricky the first time, so be sure to test out a little bit of the icing before putting it into squeeze bottles.

Simple Ingredients

Here are a few of the basic pantry staples that you will need to get started with this easy recipe.

  • Confectioners powdered sugar – also known as icing sugar.
  • Meringue powder – most commonly found at Michaels.
  • Clear vanilla extract – important if you want crisp, white icing.
  • Cream of tartar
  • Gel food coloring

Tip:Gel food coloring works best for a vibrant color but liquid food coloring drops would work to tint the icing as well. Liquid coloring may dilute the icing so be sure to check the consistency and add more powdered sugar if needed.

Be sure to set aside enough time to decorate your sugar cookies, you may even want to spread it over a few days. When adding details it’s important to wait until the layer of flooded icing is completely dry otherwise the icing may crack and the colors will bleed.

How to Use Royal Icing

2. Place cooled cookies on a flat surface for decorating. Having them lay on a piece of paper towel helps to prevent the cookie from moving around too much.

3. Line the outside edge or area that you want to fill with a thin bead of icing. This helps to create crisp edges.

4. Flood the area with icing. Use a toothpick or scribe to coax the icing into corners or spaces and pop air bubbles.

7. Allow the icing to completely dry or harden before adding details that you want to stand out or appear lifted.

Allow the icing to harden for at least four hours before packaging or storing the cookies. The iced sugar cookies may be stored in an airtight container at room temperature for 3-4 days, in the fridge for a week or in the freezer for up to three months. I like to place them in a single layer with wax paper between each layer so that they don’t stick together.

FAQs

How to get royal icing to harden? ›

Luckily, there are multiple ways that you can speed up the process. Leave your cookies to try at room temperature and expose them to as much airflow as possible. If your home is humid, use a dehumidifier or a fan to help dry the cookies quicker, or use a heat gun to solidify the icing at lightning speed.

How do you make royal icing stiffer? ›

The icing consistency can be adjusted at any stage of the decorating process simply by stirring in sifted powdered sugar to thicken, or water to thin. Remember, at this stage, it is important to gently stir in (not whip on the mixer) any additional water.

What makes royal icing crunchy? ›

If you over beat royal icing, it dries to a crunchy almost foamy texture and often appears porous.

What is the difference between royal icing and sugar cookie icing? ›

Cookie icing can be used in the same way that royal icing can; however, it doesn't dry as hard as royal icing does. It's great for flooding cookies or piping designs into wet icing. To thin the consistency of cookie icing, just pop it in the microwave for about 20 seconds.

How to make a royal icing set? ›

If you are using an instant royal icing mix then it should already set quite hard but you can and some extra powdered egg white to make it even harder. If you want the icing to remain slightly soft then you can also add 1/2 teaspoon liquid glycerine to each 500g/5 cups sugar.

Why won't my royal icing go hard? ›

I'd experienced this issue when I thinned my icing with too much water for flooding. The good news on that front is that if you noticed that you'd done it before you start icing a cookie, you can stir in some sifted powdered sugar (or some reserved piping consistency icing if you want some) and recover.

How do you make icing harder? ›

Add small amounts of ingredients like powdered sugar, cornstarch, gelatin, heavy whipping cream, or cream cheese to make your frosting less runny. For flavored frostings, ingredients like cocoa powder and peanut butter can also work. When your frosting is the right consistency, it'll be easy to spread or pipe.

What does overmixed royal icing look like? ›

Undermix, and your royal icing looks translucent and is structurally weak. Overwhip, and you're giving too much volume to the egg proteins via air, causing the structure to weaken in a different way. Overmixed icing usually looks porous when dry, and sometimes will not even fully dry and be soft/brittle.

What does adding corn syrup to royal icing do? ›

Corn syrup helps give shine and also a soft-bite to your icing. Without corn syrup, your royal icing can be as hard as a rock, and no one wants to chip a tooth on a cookie. I use 1 Tablespoon of Karo Light Corn Syrup in my icing recipe. I've seen some cookiers use more but this ratio works well for me.

Can you over beat royal icing? ›

Over mixing is one of the many ways royal icing can go wrong, and I've found that it can only be over mixed AFTER all of the ingredients are mixed together (when the sugar is mixed with the meringue powder).

Can I put royal icing in the fridge to harden? ›

As mentioned above, royal icing needs to be exposed to air to be able to dry completely. By putting wet royal icing in the fridge you are not only preventing the icing from actually drying, but the humid environment will also likely make the colors bleed.

What is Queen royal icing? ›

Originally known as 'egg white' icing, this confection's name was changed to royal icing after Queen Victoria's large, elaborate wedding cake was decorated with it in 1840. Traditionally made with beaten egg whites, powdered sugar and lemon juice, royal icing can be whipped up in no time with an electric mixer.

Can you use royal icing on cookies? ›

This thicker royal icing is perfect for the final decorations that sit on top of a cookie and make it so much fun. Remember that each flooded cookie should be completely dry before you start to decorate with piping icing. If it's not dry, your piped decorations will bleed into the thinner icing.

What to do if royal icing is too runny? ›

How to Fix Thin Royal Icing
  1. Add powdered sugar. To thicken your royal icing, add more sifted powdered sugar—a couple of tablespoons at a time—until the icing reaches your desired consistency.
  2. Add corn starch. ...
  3. Let it rest.

How do you make can frosting harden? ›

If your store-bought icing is too soft to pipe, you can stiffen it by adding powdered sugar. Use a hand mixer to incorporate 1 tablespoon of confectioners' sugar into your icing. Continue until your desired consistency is achieved.

Can you dry royal icing with a heat gun? ›

The Wagner Studio heat gun makes drying royal icing-topped cookies easy and allows for quick use of multiple colors, which used to take hours of drying time.
